Homemade Chocolate Covered Marshmallow Eggs

Each year my mother-in-law invites the grandchildren over to dip and decorate homemade marshmallow eggs. It takes every ounce of restraint I have to not steal all of the kids marshmallows because they really are the most delicious things I’ve ever eaten. This year I decided I would try my hand at marshmallow making and that way I would have an entire batch to eat all by myself!

Homemade Marshmallow Easter Eggs

Although I LOVE food, I’m not a super confidant cook. My MIL explained the process to me, but still unsure, I watched a video tutorial of Martha Stewart and Claire Danes making some. It looked easy enough. I followed this recipe and got the mixture successfully into my Bosch kitchen mixer.

With 2:23 left to go my wire whisks broke from the top of the machine! I didn’t even have a chance to add the vanilla. But, I determined by a very important method – dipping my finger in it – that it still tasted super yummy! So, my estimate is that you only need to mix it for 10 minutes, then stir in the vanilla. I’ll do that next time (since I was able to fix my whisks).

The mixture was SUPER thick and getting it into the ziplock bag for piping was tricky – but I did it. It would be helpful to have one person holding the bag and the other person scooping.

While it was in the mixer, I prepared my baking dish by adding about 5 – 6 cups of flour and then made indentations using a spoon. My mother in law uses a plastic Easter egg to get her shape, both work for me.

I wasn’t sure how the soft flour would hold enough to be a mold, but it actually worked. I piped the mallows in and then pinched it off with floured fingers. Once the entire dish was filled I dusted the tops with flour and let it sit overnight to dry out.

The next morning I dusted them off and dipped them in melted chocolate and set them on wax paper to harden. Then came the best part – tasting them! They are delicious!! I don’t care if they completely break my mixer – they are worth it!
